Pholourie is yet another Trinidadian favorite. It's a savoury fritter which is usually served with some type of chutney as a dipping sauce.
Recipe:
INGREDIENTS:
1 lb flour
2 cloves garlic minced
1 tsp saffron powder
1/4 tsp baking soda
2 tsp baking powder
1 tbs yeast
2 tbs split peas powder
1 tsp salt
Water
Oil for deep frying
METHOD:
1. Combine the split peas, minced garlic, yeast, saffron powder, baking soda, baking powder, water, flour, salt (and pepper optional) until you have a soft paste.
2. Allow to rise for one hour.
3. Heat oil until medium hot. Drop the pholourie mixture by teaspoonfuls into hot oil.
4. Fry until golden brown or until the pholourie floats to the top of the oil.
5. Drain and serve hot with chutney tamarind or mango.
Trinidad Carnival has roots that stretch back to Europe but has been strongly influenced by the African culture of the former slaves.
