Every Trinidadian loves a chow and some Trinis I know can make a chow out of anything. It is fairly reminscent of a salsa. My favourites types are mango and plum chows. This is one dish that will make your mouth water!

Recipe:

INGREDIENTS:

1 half ripened mango
1/4 teaspoon of salt
1 dash of black pepper
2 leaves shadon beni or cilantro finely chopped
1 cloves of garlic finely chopped
1/4 teaspoon lemon juice
Hot pepper to taste

METHOD:

1. Wash and peel the mango
2. Slice into wedges.
3. Add salt, black pepper, shadon beni, lemon juice, garlic and hot pepper, toss and serve! Easy as pie.
