Accra is a fritter made with saltfish. It is pretty easy to make. It entails just a few basic ingredients and voilà, you've got a delicious treat on your hand.

Recipe:

INGREDIENTS:

2 cups flour
2 tsp baking powder
1/2 lb chopped boneless saltfish
2 scallions chopped
1 small onions chopped
water
1 scotch bonnet or hot pepper
black pepper to taste

METHOD:

1. Combine all dry ingredients in a bowl; pepper, scallions, onions, saltfish, scotch bonnet.
2. Add water and mix thoroughly until mixture forms a bread-like dough.
3. Drop by spoonfuls into hot oil and fry until both sides are brown in a pan or deep fryer.
